Ohhh…What a wonderful day for the tastebuds…err, ok, tomorrow actually. I’ll explain, don’t worry.
After leaving you after breakfast I went to my iGoogle in hopes of it being restored and NOPE. So if you didn’t see my post from this morning, leave me your blog address when you comment…I’m trying to collect them all again. Thanks.
I had an “early” lunch, if you want to call it that, since it was at around 10am. Consisted of a whole wheat pita w/ Athenos Hummus, and an apple.
Then I went on a baking spree…oh my goodness it was wonderful. I can’t tell you how happy I was to feel the heat from the oven and the whiff of spices from all the baked goods…ahhh…
And of course the recipes came from blogs! First I tried out the muffins Meghann made, but used Rhodeygirls original recipe (Apple/Walnut/Raisin Muffins), sans the walnuts because I had none and no white sugar.
Then I moved onto the Pumpkin-Peanut Butter-Chocolate Chip Muffins that Tina made on Carrots N’ Cake. The difference with mine was I didn’t use PB Chips (had none), only a 1/4C brown sugar, and 2% milk instead of soy (had none).
I tried another of Tina’s recipes after that one: Peanut Buttery Bars! Mine came out a bit dry, so I think I might end up crumbling them up and making it into a yogurt topping, like granola!
And last but not least, as I would have made my all time favorite Pumpkin Bread, I decided to try a different one, this from Miss Lindsey’s from SoundEats. I had to use chunky applesauce since we had no smooth kind, and used an egg because I had no ground flax.
And even though my tastebuds were raving for these…I had none, because they all contained EGGS. And since I’m participating in Blogger Vegan 4 a Day, I opted out. So they’ll be on my menu for tomorrow for sure!
And since I couldn’t indulge in the baked goods themselves…my Ghirardelli chocolate chips were vegan, so I had err…a bit lots of those. ((shoulder shrug))
I might have overdone myself on those, so I wasn’t hungry all day long…and that was at like, noon? I did a workout around 6pm after going grocery shopping w/ my mom and pounded out two miles around my neighborhood in the dark, and then a 45 minute yoga video, that is gonna leave me in a bit lots of pain tomorrow. But the good pain.
But you can be that I was famished by the time I finished my workout! I had my mom roast up some broccoli and potatoes while I did yoga, so I had about 3/4 of a potato (we roasted two)
Along w/ a salad that contained the broccoli, leftover chickpeas from last night mixed w/ marinara, on a bed of spinach w/ orange bell pepper, tomatoes, and cucumbers.
Boy was I full! And then mom made me finish off the cantaloupe…1/2 a cup?
Whew!
So, in my review for Vegan for a day…I didn’t do such a great job; not because I didn’t stick to Vegan elements, but because I didn’t balance out my meals like I should have. It was purely circumstantial, but I think I’m going to try again tomorrow to really get in the real meals I should have gotten…instead of having chocolate chips for lunch.
It should be interesting how dinner goes though since I’ll be joining my brothers at their apartment Friday night and they’re having an early Thanksgiving Dinner with all their friends and roommates. We’ll see what I come up with to bring! Hopefully something good!
Now I’m off to read a bit…and wonder how many of you are squealing as you watch your Twilight characters on the big screen…you ladies crack me up.

Yes lets get together for sure!!!! I ll be in TN until December 4th or so and when I get back we are so meeting up! Is there any fun Christmas activites down in LA we could go to??? Plays??

Mmm, all your baked goods look delicious! Especially the pumpkin muffins and bread. You have awesome restraint-- vegan or not, I don't know if I could wait ;) Haha, the crazy twilight fans are hilarious. They are dedicated, at the least ;)

Huge kudos to you for being able to avoid those baked goodies for your vegan venture. I don't know if I'd have that kind of will power, that's for sure. They all look pretty darn scrumptious!
