Do Wop Du Bop

I feel like dancing!  Ok, I really wish I did, so I thought maybe if I said it, I would actually do it…We’ll see!

Yesterday was a bit off, but I got in a SWEET STRENGTH TRAINING REGIME before I went off with my mom to a Japanese Craft Fair in town.  I have collected lots of the SELF Pull Out Exercise Cards over the years and pulled them out for some exercise Sunday morning. 

You can check out all the moves that I did in the album, and you can see how many I did by the numbers in ball point pen written on the card.  Overall the 31 cards took me about an hour and 15 minutes and I sure was a sweaty mess afterwards!!!

Oh, but I wanted to show you all the best way to de-seed a squash…and probably anything else like pumpkins and such: ICE CREAM SCOOPER!!!  OMG it made my life that much easier than using a spoon…What’s your secret to de-seeding vegetables?

I also wanted to give you a review on this bar that I got at the Health Expo before my 1/2 Marathon the other weekend!  If only I had had some greek yogurt to crumble it on top of…alas, the bar was quite goodIt was very very similar to the Pumpkin Crunch Bars by Kashi, and really, I don’t know there was much of a difference!  Actually, I think this one tasted less sweet, which is what I like, so three cheers for Cascadian Farms!!!

Blah blah blah about my night and rest of yesterday, lets look at today’s funness so far, shall we?

I decided last night that I wanted Kath’s Oatmeal Pancakes, after seeing Miss Jenny consume their graciousness on her blog…nom nom.  I ended up using:

  • 1/3C Old Fashioned Oats
  • 1/2 tsp Baking Powder
  • 1 egg white
  • Dash of Vanilla Extract
  • Dash of Unsweetened Almond Breeze
  • Cinnamon

I made two pancakes out of the mix and spread 1 Tablespoon of Natural PB between the two, and topped it off with a heated and diced apple in cinnamon

Food-gasm.

And we had a can of pumpkin puree that needed to be used, so I went to work.  And what else than the great pumpkin recipes on Tina’s Blog?  I made her Pumpkin Peanut Butter Chocolate Chip Muffins, but in cookie form, and it works!  But instead, I used 1/4C agave instead of the sugar, and raisins and some walnut instead of the chocolate and peanut butter chips.

And of course I couldn’t resist not making her Chocolate Pumpkin Loaf, but in muffin form:

I did made a few substitutes though: 1/4C agave nectar instead of either the sugars, 1/2C bittersweet chocolate chips.  Yum!

Now my head hurts and I need to eat lunch!

OMG I didn't even think of using an ice cream scooper! I'm always strugglin with a spoon or a fork or both...thanks for the tip! :)

I love the ice scream scoop method! Usually I just use a spoon and a lot of profanity.

Ice cream scoop? Squash de-seeding genius! I usually just hack at it with a spoon and usually knock it into the crash.

Cascadian Farms makes another crunchy granola bar just like that, except in Crunchy Almond Butter, and it is ridiculously good. You must try: Greek yogurt + maple syrup + crumbled Almond Butter bars = omg

Awesome job on the workout! Those cards sound like a great thing to have :) And an ice cream scooper for deseeding! oh my gosh, that's genius! I usually just use a spoon, lol.

Ice cream scoop is quite brilliant for removing squash seeds. I've always used a grapefruit spoon...the little serrations come in really handy in getting all the stringy bits out. Mmmmm...squash....

Ice cream scoop for cleaning out squash? Hmmm, sounds like a good idea to me. I use a melon baller to get the cores out of apples & pears :)
