Yeah…remember me talking about how I couldn’t go to work yesterday morning? Well, this is why:
That’s actually what it looked like when we drove through it…it was much worse three hours beforehand!
Anyhow, yesterday was a very slow day with only two Cooper’s Hawks, but alas, it was nice weather, so I’m not taking it for granted!
But, I thought you would all be proud of my dinner yesterday: OKRA!!! Yes yes…sadly, this lady has never had okra in her life, and I bet Meghann is ashamed of me…alas, what did I think? I loved it! Well, at least the way it was prepared last night. Just cooked with boiled tomatoes, a bit of olive oil, garlic, spices and such…nom nom! I ate many many heaping spoonfuls of this, along with some boiled potatoes in spices for dinner (we were at our kind neighbor’s again as our farewell dinner).
Anyhow, I didn’t get to blog about this last night cause I was exhausted and my throat wasn’t feeling too well… I need to stay healthy for my race in FIVE DAY!!!!
Ergo, after a good solid 8.5 hrs of sleep, I started today off on the right foot! Breakfast cookie anyone?
I’ve decided that I like keeping the pb separate and smoothing it out on top, instead of mixing it in. So delicious! Anyhow, mine included 1/3C oats, a banana and some cranberries with cinnamon, and then the PB on top.
I was agitated all day (can’t talk about it on here, might get me in trouble) but I tried to focus on good things and of course my great eats through the day. An apple for morning snack:
I was ravenous for lunch, so I was glad to finally dig in! Some Kashi TLCs, Athenos Hummus (I’ve been getting Sabra as of lately because it’s been cheaper, but this roasted red pepper flavor is and always has been my favorite!), three carrots and a 1/3 bell pepper.
I tried so hard to let time pass nicely this afternoon but in all honesty, it wouldn’t go fast enough (again, can’t discuss here). But I had this as an afternoon snack before my intended workout: Odwalla Berries GoMega Bar.
I headed straight home and did a 4.2 mile run (in 35.25 minutes!) along the road and came back to do a small set of moves for strength training:
- 35 lunges
- 50 bicycle crunches
- 60 crunches
- 60 reverse crunches/curls
- 30 laying down side leg lifts (each leg)
- 40 laying down inner leg lifts (each leg)
- 40 pushups
- 30 squats
I was actually quite shaky afterwards and couldn’t decide if it was because of these moves, or because I was simply fatigued/hungry.
I dug into dinner as soon as it was done cooking; burnt my tongue I was so hungry! I sauteed together some spaghetti squash, broccoli, cauliflower, corn and onions with a Quorn Cutlet in some fajita spices and had it over a bed of spinach. I seriously could eat this every night!
I had this as a bit of dessert…frozen blackberries
Now I’m snacking on some cheerios and raisins and am off to read some of my favorite blogggggsssss!!!
Only FIVE MORE DAYS TILL MY RACE!!! I’m looking into finding out if you can track me online or not…would you be interested? There is a texting program, but it costs me $5 and sorry, but even that I can’t splurge on…need to save every cent I can!!!

Yum, your okra sounds so good! I've had it out but have never cooked with it. I think its time!
I'm one of the few people that just CANNOT get into okra!! I keep trying... and nope... not a fan! I'd totally track you online :)

okay now i have to admit that you have convinced me to try okra. here in singapore it's such a popular vegetable for the muslim community. but i was told that it tastes really bitter?!?! does it? but i like the way you prepared this. maybe i'll have it alla melissa then ;)

What a flood!
I tried okra for the first time last year... I liked it! Apparently cooking it in cornmeal is the thing to do, but I haven't done that yet. Have you tried it raw?
Whoa, that weather is wild!! I'm so scared of driving in the rain, let alone flood conditions.
I don't really have strong feelings about okra. I'd definitely give yours a try!

That dinner sounds absolutely delicious!! I bought some spaghetti squash last week but haven't had time to cook it up yet, I think it's days are numbered!
Holy water!!! I can see why you didn't drive through it if it was worse than the photos. Yikes!
I don't mind okra. I just don't like how it can get slimey....

I kind of want a new camera for xmas too!! My camera totally seems to be dying after a good 4 years? 3 years? Course we bloggies use them everyday!! I usually let my Dad decide what to get me though! He is all into those Consumer Reports and product reviews, etc!!
So glad you tried okra!! It is seriously one of my top fav. veggies- I just forget about it because it is so hard to find!! I think I took it for granted before I moved!!
