What a night we had!
I was a busy girl baking, cooking, wrapping, and a bit of everything yesterday! I’ve got a new recipe for you I made up for dinner but I’ll post it later on.
In the midst of all the madness I was able to squeeze in a 5 mile run that felt absolutely amazing, as I haven’t been able to run since last Sunday when I did my 12 miler and was left with a bit of a bum leg!
We headed off to my Dad’s cousin’s house around 5 for dinner.
Check out the delicious spread from last night with my Dad’s side of the family:
In our family so that everyone can see each other for the holidays we get together with my Dad’s side of the family on Christmas Eve every year. This always helped since Christmas Day used to be done with my Mom’s side of the family. Now it’s just our family (but I’ll be seeing my Mom’s family in Arizona next week, and Jenn!)
I had a two of the Zucchini Tofu Roll Ups, some roasted potatoes and a green salad w/ veggies, chickpeas and some TJ’s light soy sesame seed dressing.
(There might have been a handful of two of raw veggies and some sour cream and onion potato chips slipped in there before all the feasting began)
It was nice catching up with the family and chatting about my new adventures to come in Florida when I move out there just after the 1st of the year! Let the excitement begin!
I made a cheesecake on the 23rd for dessert time, and it was supposed to be a Chocolate Swirl Cheesecake, but because I don’t read directions for recipes (ie I hardly every do, I just read the ingredient list. LOL) it came out more like a Black & White Layered Cheesecake.
Doesn’t matter what it looked like! Everyone thought it tasted great (I wouldn’t know, I hate cheesecake!)
There were also two pumpkin pies, some brownies, fudge, rice crispie treats, sugar cookies and shortbread.
I had one of the brownies, some M&M’s (almonds removed from the inside, don’t like almonds!) and two of the rice crispies. Nom!
Merry Christmas from my family to
you and all of yours!
I’ll be back to update about our Christmas Dinner (Eric’s girlfriend is coming back over to join us!) and the festivities later tonight!

Sounds like an amazing meal with your dad's side. I don't read directions or follow them too well either, but your cheesecake still looks amazing.
