So many things about today! I don’t even know what to start with!

Congrats to Caitlin for having the campaign she started be aired on TV again (she’s been on TV before for Operation Beautiful in Orlando, FL).

My day went by great today too! I started off the day with an awesome bowl of oats since we’ve been out of bananas and berries! There’s PB spread out on the top of that…:D
Then I got to BAKING AND DIPPING! First I made PB Filled Chocolate Brownie Cookies…for some friends to get in their coming packages…
And omg the best dipped pretzels i have ever made in my life. Ok, well, close. I took the Newman’s Own Organics Protein Pretzels and dipped them in 60% Ghirardelli Dark Chocolate…
They were so awesome looking…I had to eat a few over a dozen. How could I resist?
Oh yeah, and because I’m sloppy and chocolate is horribly messy, this is what happens to your clothes:
Of course that was eaten after lunch like a good girl! I started off with two clementines because I was starving: (sorry you get the after photos…)
But then rounded out the meal with leftover couscous from last night, mixed with an egg and two whites scrambled together.
I didn’t think until after it was heated and ready to actually include some vegetables. Oops. In comes the three carrots I cut up.
I went grocery shopping w/ Mom again to get more baking supplies and then headed out for a great run! I ran a total of 6.45 miles, but there were some speed intervals included in there.
Here is how the route went:
- 1.85 mile warm up jog
- 1 mile at 80-85% = 7.52 minutes
- 1 mile cool down jog
- 1/2 mile at 90% = 3:01 minutes
- 1/2 mile cool down jog
- 1/4 mile at 95% = 1:38 minutes
- 1.65 mile cool down jog
I was totally pooped by the time I was done, but glad to have gotten some speed work in! I am going to try to incorporate more speed workouts into my training to start getting some PR’s in next year! Part of the New Years Resolutions I’m coming up with!
My brothers wanted Enchiladas for dinner tonight, so I took a spin on the normal with Dad’s and my Vegetable Enchiladas (Dad doesn’t eat the meat ones because he has Crohn’s disease and meat well, makes him miserable in more ways than one!).
I decided to use the Whole Wheat Pitas we had on hand and spread out Enchilada sauce on all the sides. Inside I placed roasted eggplant, zucchini, carrot, bell pepper and broccoli.
Mine also included black beans and a Laughing Cow Light Cheese Wedge.
Dad’s had lots and lots of cheese in his (and on top!)
They were ok, but the pita was a bit overwhelming on the flavor front and because I don’t use real cheese, the top pita was way dry and the bottom one was totally soaked from the vegetables. Oh well, you cook, you learn!
It was accompanied by a nice ramekin full of cantaloupe and kiwi (times two). Mighty tasty.
I had an apple a little later while chatting and hanging out w/ my brothers and now I’m off to catch up on my reading of “Pledged.” This book is absolutely…interesting!
Don’t know how much I’ll post tomorrow as I’m heading down to San Diego to hang out with some friends and will be down there for the night! I’ve got a nice run planned for down there too, since I totally miss running on the bay and at the beach!!!

Incorporating more speed is definitely one of my running goals, it not only makes running workouts more interesting and go by faster, but also you can watch yourself improve over time.
