Finally…it only took 3,000 miles!

I finally reached my new home!  I’m still settling in, but I’ll give you all a tour soon so you can see my new digs!  I’m sure you remember my humble abode from Texas last summer, and maybe even the other one from when I was in Florida last winter and spring?  Anyhow, my new living space is definitely better than any I’ve stayed in before as a tech…I’m move’n up!

But let me step back to last night for you!  After vegging out with Meghann and Derek taking a nap, we headed out to get Meghann her traditional post-race fro yo.  I had a sampler of the Dark Chocolate flavor and totally would have gotten my own bowl but I was far too freezing to even attempt having any!  We hit up the grocery store afterwards for dinner supplies and got started on our Jalapeno Cornbread and Bean Chili:

The cornbread was made from a recipe on the back of a package Meghann got in San Antonio last year and the chili was a throw together of okra, corn, carrots, onions, mushrooms, kidney beans, diced tomatoes, some tomato paste, a bit of flour for thickening and chili mix seasoning.  I added some fresh onions to the top…twas delish. 

My dessert was the rest of my pretzel rods from Downtown Disney Friday Night…I was chocolate happy after that!

Meghann and I crashed out at just after 9.30 last night and didn’t want to wake up at 7, even after almost 10 hrs of sleep!  If I thought I was tired, I’m sure she was even worse!  But more props to her for being able to get out of bed and walk!

I had a quick breakfast of oats, cinnamon, banana, almond butter (ok, I can’t say I hate AB anymore because this one is great…Barney Butter just tastes nasty to me!) and some of the jelly I used yesterday on my waffles:

I sadly had to leave Meghann as she went to work and I drove 4 more hours to my new home!  I ate a Clementine and orange on the way down but danged was I hungry when I got there!  I made a quick lunch w/ a Whole Wheat Rudi’s bagel, 1T PB, jelly, and a banana.

After I unpacked my car I snacked on two Newman’s Own Organics Hermits and then headed out for a run.  Goodness it was glorious to get out and run.  I tried to figure out the best place around my new home but it looks like it’s going to be difficult since there are no sidewalks and heavy traffic…today I was running in high grass on the side of the road.  I’ll have to explore more areas!  Anyhow, I ran about 50-55 minutes and felt great every minute of it!

After cleaning up I headed out to get some fresh groceries with my boss and settled on making a quick dinner.  I made some whole wheat couscous w/ spices and steamed a bunch of veggies, added black beans and topped with spinach…it probably would have been a better combo had there been some flavor to it.  It was so bland I wanted to cry! I thought all the spices in the couscous would help…but they didn’t.  We’ll see what I do with it next!

I was still hungry after waiting a bit and watching Troy, so I dug into my very tasty and more-delicious-than-dinner dessert: H2H and Semi-sweet chocolate chips by Guitard and Candy Cane Lane Tea.

I just snacked on a few Newman’s Own Organics Prunes and pretzels (still hungry, what gives?!) and now I’m off to bed…I’m pooped!  I’ve got a lot of work ahead of me tomorrow!

Yay! Glad you made it their safe and sound and that your abode is the nicest yet. You are definitely movin' on up ;o)

It looks like you had a fabulous weekend with Meghann - how cool that you got to be there to support her and the other girls during their big race! I'm looking forward to hearing more about YOUR big day today and beyond...best of luck!

Hooray for fabulous new places! ;) Can't wait to see your new home.

Dinner looks GREAT--especially after what I bet was a loooong day. You have just reminded me to stock up on black beans for our pantry! ;)

never in my life have i had chili, but i jst know i'd love it, esp with a side of cornbread. congrats on making it to your new casa!! can't wait to see pics :)

I'm always mucho hungry after tasteless meals! Glad you made it up for it with a tasty dessert though.

And even more glad to hear about the new digs! Glad you've arrived and are liking it so far! I want to see the place!
