It’s my middle name today.
I have been all over the place; Mind, body…whatever else there might be. I guess I’m just a little antsy cause I’ve been stuck at a computer for the past few days and haven’t been able to run/get my blood flowing with my new, old and profound injuries in my left leg…
The walk and strength training routine today also made my appetite totally wonky, and I couldn’t figure out when I was truly hungry all day! I hate it when that happens!
I snacked on a bar I got at the Miami Half Marathon Health and Fitness Expo this weekend by Cascadian Farms: Fiber Right Dark Chocolate Almond Chewy Granola Bar
It was just ok. Actually, half of the “sticky stuff” that was used to keep the bar had separated because it had been subjected to a bit of heat, and kinda freaked me out. I ate the bar but rid of all the stuff that had separated out.
Lunch was eaten in a flash as I was deemed a driver today for the other techs to and from the boat ramp…
I had a piece of Dave’s Killer Bread w/ Laughing Cow, tomato, onions and spinach, with an apple on the side. And I ate another piece of bread after…specifically the hull of the loaf…BEST.PART.EVER.
I snacked the afternoon away with Three Sisters Honey Puffs and Kashi Sunshine, along with a pear.
I was hangry by 5 but knew eating then would be way too soon…so I tried to hold it off…but it didn’t work. I’ve had this can of chili sitting around forever and finally decided to heat it up tonight. I don’t like to eat chili two days in a row, so the other half of the can when to my coworker Brit.
I bulked my chili up by adding in cubed eggplant, cauliflower, broccoli and spinach, topped off with raw onion, all on top of my TJ’s Brown Rice Medley.
Dessert came in several parts tonight…I had 1/2 a banana leftover from breakfast this morning and decided it would make a great dessert for tonight…frozen and covered in dark chocolate. Can you say YUM? My face was pure joy as it was chopped up and devoured.
Then I proceeded to make my own version of Super Charge Me Cookies by Deena Burton from Eat, Drink and Be Vegan…and I call it my own version because I was missing half the ingredients and subbed out a bunch of them. Hah…my panty is lacking a few things…either that or I’m too cheap to purchase them.
(I may have snuck in some extra chocolate chips into my mouth for some enjoyment…)
Of course I had to make sure they tasted good…and they were pretty tasty! I would definitely add some nutmeg next time, and instead of 2/3C whole wheat flour (because I didn’t have spelt) I would use 1/3C whole wheat and 1/3C all purpose. Maybe it will make them less dense and not so dry?
And not only did I make some great cookies tonight, but I also made my first ever batch of homemade hummus!!!
Mine was very simple and just thrown together, but included:
- Homemade chickpeas
- Tahini
- 1 clove garlic
- Lemon juice
- Chickpea juice
- Sea salt
- Fresh ground pepper
- Cumin
- Curry Powder
- Olive Oil
It needs to sit overnight to soak up more flavor, so I can’t wait to try it tomorrow with lots of veggies!
This girl is tired! I’ve got a super early morning tomorrow with everyone heading out so I gotta get to bed!

I tried those bars and I was not a fan either. Bummer.
Yay for the hummus, i've been meaning to make that and those cookies... oh forever now haha I need to get around to it, like for real.
And the banana... omg. Yum!
Your hummus looks perfectly creamy! I have yet to try the SCM cookies as I dont have half the ingredients in my kitchen! Your versions look yummy though.
good idea to freeze the nanner and cover it in dark chocolate, i'm proud! ;). sorry to hear about your leg, ouch! your ssandwich sounds amazing, i love laughing cow in sandwiches! but eating it ON apples is really good too
all these eats look so delicious <3 love them!! those bars are like healthier fiber one bars, haha. they look good but sorry to hear they were jus tok... hummus sounds awesome and so do the cookies!1

I'm no baking expert, but I have learned through experience that ww flour is "thirstier" than other flours, so that's probably what caused any dryness in your cookies. You're right that you could probably sub in some all purpose to help that situation, but you might also play with ww pastry flour, which is a little lighter in texture so it works more closely to all purpose. I've mostly only used it in recipes that call for it, but at least in my experience it seems like a closer sub for all purpose.
Aaaaaaaand I really need to do the homemade hummus thing. Especially with that whole chapter devoted to it in ED&BV! No excuses.
