Out Of Time

Sorry my posts have been so lack luster this week.  With the combo of being sick and having wake up calls at 5-6am my butt is getting kicked.  Lets put it this way, it’s oh, 9pm and I have yet to check twitter.  I don’t even know that I want to try and catch up.  Otherwise, you guys can tell me if anything interesting happened?  Although I know you’re all interesting… ;)

Anyhow, it’s been a long day today, so I’m going to recap the only food picture I have today: Dinner!

Which was: Homemade Sweet Potato Veggie Soup!

Ingredients:

  • bit of olive oil
  • 2 large garlic cloves
  • 1 small onion chopped
  • 3 celery stalks, chopped
  • 2 carrots, chopped
  • 1 large sweet potato, cubed
  • 1 large chard leaf, chopped
  • Mix of Italian Spices to taste
  • 3-4 C water

Directions:

  1. Sauté garlic and onion in olive oil until browned.  Add in spices.
  2. Add in celery, carrots, sweet potato, chard, and water.
  3. Cover and let simmer for 30  minutes and presto!

I’ve served mine the last night with homemade chickpeas and tonight, with an egg and egg white and two pieces of toast.

I might have cooked it a bit too long as the potato just kinda fell apart in the bowl.  Was still tasty thought!

K, have to be out the door at 6.30am for work and a long day thereafter!!!  Wish me luck I don’t freeze (because yes, it might be possible as frost is predicted for Southern Florida tonight.  Just great).

aw don't apologize for your posts! this is your blog, and you blog whatever you feel like blogging. we'll all still read, of course. :) i hope you're feeling better, despite having such early morning calls! your dinner looks so warm and comforting, hopefully it gets rid of that illness you might have!

Great dinner! That's crazy weather for Florida! We hardly ever got frost when I lived in Central Florida.
