Wait til the end to find out!
I started off today early…because that’s so unusual for me with my kind of work. I can’t eat that early in the morning so I packed up some oats that I had soaking w/ an apple and water from the night before…
I microwaved it a bit long and it kinda turned into an oatmeal bar topped with PB! It was quite tasty!
I spent the morning setting out minnow traps…and had a snack (Ugli fruit and an apple spice muffin) halfway through. I was absolutely ravenous today, which I’m guessing is from exhaustion…as I woke up this morning with a headache.
We had to eat our lunch early because we knew we would need to work through a normal lunch time with all the work we had to do. Today I brought along a cheese and veggie wrap along with an apple…
And ended it with a sweet treat that, if you can’t tell is quite smashed, had been hiding at the bottom of my bag…
As much as I was supposed to be paying attention to the fish, creepy crayfish and water beetles…I was more interested in the beautiful Red-shouldered Hawk calling in the distance…sorry my camera quality is poor for him; he was really far away!
I came home with the idea of getting in a run but seriously, I was exhausted. I thought I would give it a try anyhow, and since I knew it was going to rain super soon, I stuck to running in my neighborhood. Lo and behold…it starts pouring, and I’m done running at a mile. It was fine though, I wasn’t feeling much more than that.
So instead I came inside and did 30 minutes of yoga to help stretch my super tight hamstrings from yesterdays ST session.
After cleaning up I was super stoked for dinner! I have had the ingredients and such for Spring Rolls for a while and finally decided to make them tonight! I need to start getting rid of the things in my pantry before I move, so this was perfect!
I started out by marinating tempeh in soy sauce, garlic and sesame seed oil overnight and sautéing it with some onions, extra garlic, bell pepper and baby mushrooms of the Japanese variety tonight.
I also chopped up some carrot strips and lettuce to add a bit of crunch to it. I actually made some vermacelli noodles to go in there too but I overcooked them and they came out as mush…ergo, in the trash they went.
All rolled up I ended up with four of them! And I was so proud of myself when I made My Own Nut Butter Dipping Sauce! I took some of my regular Sunbutter and mixed it with a bit of sesame seed oil, low sodium soy sauce, water, garlic powder, ginger and crushed red chili pepper.
OMG I need an award for that dipping sauce. It was freak’n awesome!!!
That’s about the most exciting part of my day…so yeah. Sorry for the lack luster post.

My bars are ALWAYS smashed...I can't seem to transport them in one piece! I saw a blogger (I forget who though!) transport them in a glasses case once...genius, no? The Sunbutter dipping sauce looks amazinggg. I have a jar of it in the fridge, I'm feeling a spoonful or two now!

Nice job with the spring rolls and the sunflower seed butter sauce! Looks so good. I have some spring roll wrappers I need to bust out and use sometime soon.

Wow, that sunbutter sauce sounds so good! I havent been able to find those rice roll wrappers and am so bummed...all the other ones out there are wonton wrappers or egg rolls...so lame! I never commented yesterday but read via my reader and just want to say that I am so happy you posted about how boys affect our eats and confidence...it meant a lot to me!

Something tells me you might also like the Thai Pasta recipe which calls for chicken, but is easily adpative to no chicken.
