Who would have thought that edamame and chocolate would go together…oh wait, Trader Joes did. But wait! I beat them to it though…I put the two in a cookie. With raisins. Booya!
Edamame and Chocolate Covered Raisin Oatmeal Cookies
-1 cup quick oats
-2/3 cup whole wheat flour
-1/2 tsp cinnamon
-1/8 tsp nutmeg
-3 tbsp TJ’s dark chocolate covered raisins
-1/4 cup dry roasted edamame
-1 tsp baking powder
-1/2 cup unsweetened applesauce
-3 tbsp Justin’s chocolate hazelnut nut butter (or you can use any other nut butter)
-1 1/2 tsp pure vanilla extract
-2 tbsp honey
- Preheat your oven to 350°F.
- In a bowl, combine oats, flour, baking powder, cinnamon, nutmeg, chocolate covered raisins, and edamame. Stir until well combined.
- In a separate bowl combine applesauce, nut butter, vanilla and honey.
- Add wet mixture to dry, and stir until just completely mixed.
- Spoon batter by tablespoons onto greased baking sheet and flatten with the back of a spoon or your fingers.
- Bake for 10-12 minutes. Remove from cookie sheet and let cool on cooling rack

How fun. Mmm I haven't baked cookies in a while. Josh felt like he was OD-ing on cookies (because I was making them all the time ;)), so I pulled back. I think its time again

TJ's is a genius for all of its chocolate covered concoctions. I'd never have thought to put these in a recipe though- they look fantastic!! Hope you have a wonderful Friday love!
