Edamame and Chocolate Covered Raisin Oatmeal Cookies

Who would have thought that edamame and chocolate would go together…oh wait, Trader Joes did.  But wait!  I beat them to it though…I put the two in a cookie.  With raisins.  Booya!

Edamame and Chocolate Covered Raisin Oatmeal Cookies

-1 cup quick oats
-2/3 cup whole wheat flour
-1/2 tsp cinnamon
-1/8 tsp nutmeg
-3 tbsp TJ’s dark chocolate covered raisins
-1/4 cup dry roasted edamame
-1 tsp baking powder
-1/2 cup unsweetened applesauce
-3 tbsp Justin’s chocolate hazelnut nut butter (or you can use any other nut butter)
-1 1/2 tsp pure vanilla extract
-2 tbsp honey

  1. Preheat your oven to 350°F.
  2. In a bowl, combine oats, flour, baking powder, cinnamon, nutmeg, chocolate covered raisins, and edamame.  Stir until well combined.
  3. In a separate bowl combine applesauce, nut butter, vanilla and honey.
  4. Add wet mixture to dry, and stir until just completely mixed.
  5. Spoon batter by tablespoons onto greased baking sheet and flatten with the back of a spoon or your fingers.
  6. Bake for 10-12 minutes. Remove from cookie sheet and let cool on cooling rack
  7. Inhale, Eat and enjoy

I have to pick some dry edamame, these sound fab...almost like pistachios in cookies? YUM!

How fun. Mmm I haven't baked cookies in a while. Josh felt like he was OD-ing on cookies (because I was making them all the time ;)), so I pulled back. I think its time again

Those look delicious! I have yet to try the chocolate covered edamame from TJ's!

TJ's is a genius for all of its chocolate covered concoctions. I'd never have thought to put these in a recipe though- they look fantastic!! Hope you have a wonderful Friday love!
