To head out to San Francisco! It still hasn’t hit me that I’m going to be driving up there in about 7 hours but I think it’s because I still haven’t packed yet…and I’m at home instead of at my parents waiting for Bobbi.
Anyhow, yesterday was my last day of work for the week…how awesome is that!? It’s good because I can take time off, but bad at the same time because it means well, I’m not working which = no money. Never good when I want to travel all over the place.
I started the morning off yesterday with my peanut flour laden greek yogurt with an apple and Attune Munch as I watched all the pretty little birdies flit around me. Sadly my memory card was not in my camera so I have no pictures of it. You’re not missing much.
On the way home I snacked on a piece of chocolate chip blueberry bread with another apple before getting some shopping done before this weekend and my pizza date night last night.
After too many hours I was starving and finally settled down for lunch. I’m trying my hardest to eat up my fresh foods in the fridge so I munched on a simple open faced hummus veggie sandwich with a side of the biggest carrot I’ve seen in my life. No carrot picture, but trust me. It was over a foot long!
I made some pb flour dip on the side but it needed salt, so I added a little bit, but it was overkill. Using sea salt didn’t work as the granules were too bit and didn’t dissolve. Means I was sucking on salt. Yuck. Ditched that in the second.
Alas, I spent the afternoon cleaning up before the FB Fest travels today along with doing some NMTZ by Jillian Michaels. I used my 5lb-ers for the first sets and a 2lb-er for the second set and man was I die’n! So killer! Luckily I fueled up with a dark chocolate salted caramel before doing any of that. I was wired!
But I was more excited for my pizza date of the night as it was totally TJ’s themed! How could you go wrong, right? W picked up a garlic and herb pizza crust to use an I supplied all the toppings and spreads to go on it.
Because we’re amateur pizza rollers we broke the dough and ended up with two pieces, in which I decided we would use two different spreads for our pizza!
The smaller one was covered in this Red Pepper Spread with Eggplant and Garlic and topped with all the toppings I could find in my fridge.
The other used my Traditional Marinara Sauce that seriously is so good I could drink it. Ok, I wouldn’t, but the thought is there!
We piled both pizzas with TJ’s Whole Grain Tempeh that I cooked for a bit in some TJ’s Low Sodium Veggie Broth and piled on some squash slices, onions, and fresh mozzarella cheese. I had some artichokes but forgot about them until the pizza went in the oven. Oopsie!
12 minutes later at 400* with cornmeal on the bottom we had dinner! I tried a piece with each kind of sauce and the Red Pepper Spread was awesome! I loved that you could taste the garlic and eggplant, which I love! I ended up going back for another piece with the marinara and was finally content!
W and I hung out late before I finally got so tired I had to go to bed. You turn into a party pooper when you wake up regularly at 5.15/5.30 and work in the sun all day…then go to bed at like, 9.30! It’s ok though, as he seems to be the first person to understand that fact! I need my sleep people!
I woke up early and am now full from my TJ’s Bran muffin with TJ’s Almond Butter and a winesap apple on the side. Seriously, I’m so sad winesaps are only around for a week or two…they are so freak’n awesome!
And now I’m going to attempt to pack. I can’t believe I haven’t started. I’m such a slacker. It’s ok, I still have a few hours till I leave. See, this is me being relaxed…on the outside. Haha!
Toodles everyone! I’ll be posting next time from SAN FRANCISCO!!!!!
