Sade anyone? Oh come on now, don’t tell me you don’t remember her…from the small stint she had on our teenage (or elementary depending on how old you are compared to me, if that’s the case, you make me feel old…) radio waves?
Well, I had other ideas for how to stay warm from the snow! Crank the thermostat up to 72*? Um, NO! Bust out the P90X Legs and Back and Ab Ripper X and do them with your boyfriend? Yes please!
But first there had to be fuel of course. Being out in the snow was amazing at first, but as soon as I got back into the apartment and I was sweating like a maniac, I knew there was something wrong. Fever? Goodness don’t let it be true! Or maybe my body was reacting to the fact that I was overexcited in an environment I’m not used to and HUNGRY! Ok, I’m just coming up with every excuse I can.
It didn’t take long for me to break the fever and become covered in sweat so I knew it was time for some food! What better than my boring piping hot apple pb oats, right? I’m so sorry I’m so repetitive about breakfast…I’m just so cold in the morning…if anyone else has awesome suggestions that are portable and stay hot, I’m all for it!
P90X commenced and Whit and I will certainly feel it tomorrow. I was actually supposed to start my Phoenix 1/2 Marathon this weekend with a 6 miler but that wasn’t happening in the snow…guess I’ll eventually have to suck it up and go out there in the cold. I’ll leave that for another time! I’m leaving the 6 miler for tomorrow when the sun it up and it’s well, a tad bit warmer.
You can bet I was famished after that ST session (seriously, if that’s all I’m gonna be able to do this winter than I am going to be one ripped mofo!) but since my mouth is in so much pain, I tried to stick with something soft. Mistake of putting cucumbers in my sandwich. Seriously, what was I thinking?
I ended up with a vegetable hummus, cheddar cheese, lettuce, tomatoes and cucumber sandwich was a side of plum and strawberries.
Mid afternoon I snacked on a piece of my Chocolate Chip Banana Bread all warmed up…So tasty!
The P90X worked me more than I thought so I snacked on another piece of bread, but this one was the Ginger Pear one I made yesterday. I was nice and shared a bite with Whit.
After watching The Bounty Hunter I was ready for some dinner! I’ve had a block of Extra Firm Tofu in my fridge for a while, waiting to be used, and I figured since I can’t chew anything this was the best opportunity for it!
Japanese Tofu Vegetable Scramble
Serves 3-4
Ingredients:
- 1 block of Extra Firm Tofu, pressed to remove water.
- 1.5 T dark sesame seed oil
- 4 T reduced sodium vegetable broth
- 4 large cloves of fresh garlic, pressed
- 1/2 an onion, chopped
- Sprinkle of ginger powder
- Sprinkle of chili flakes
- Sprinkle of sea salt
- 3 T reduced sodium soy sauce
- 3/4 C various bell peppers, chopped
- 1 ear of corn, cut off the ear
- 1/2 C broccoli florets
Directions:
- Press tofu to remove as much water as possible.
- In a large pan, sauté the oil, garlic, onion, vegetable broth, ginger, chili flakes, salt and soy sauce together.
- Add in vegetables until cooked thoroughly through.
- While vegetables are cooking, mashed up the tofu to crumbles.
- Add in crumbled tofu and cook until heated through or to your texture preferences.
- Flavor with anything extra if you want, and devour!
Whit and I ended up finishing the whole thing off, my portion probably equating to a little less than a 1/3 of the mixture. I think this easily serves 3 people of you’re just eating this, or 4 if you’re adding it atop some brown rice (which I wanted, but didn’t think of until we were done cooking). It tastes great alone though!
Now we’re going to snack on some chocolate covered pb pretzel nuggets and watch Letters to Juliet. I’m in a sappy movie mood…which I wanted to watch earlier but got vetoed…I win now.

Hahaha ohhhh the sappy movie card...Mike absolutely LOVES it when I make him watch Titanic. Just jumps for joy ;) Hope it was good!!
I've been loving apple oats lately too.I love how hot the apples stay!! Have you tried adding pumpkin? It makes them twice as big...and bigger oats are never a bad thing :)
I love sappy movies too - I usually reserve them for Sundays when my hubs watches football all day!

apple pb oats are a definite keeper ;) This morning (in honor of thanksgiving!!) I mashed up 1/2 a sweet potato into my bowl of steel cuts--MMMMM!! Add some wheat germ, cinnamon, dashes of cloves and nutmeg and you've got yourself a PERFECTLY delightful take-and-enjoy breakie :)
