Eggplant Please

I have had a honk’n eggplant sitting in my fridge for a while and finally got around to cooking it tonight for Whit and I.  But I’ll get to that in a second…

Today was a day of sitting…not that I don’t do it often every single day, but this one was rather different, since I had to sit in one spot to survey for 8 hours today…pics 005

At least it was a pretty day, no?  Because it’s only supposed to get colder, cloudier and windier…I’ll try not to whine about it; promise.

Anyhow, it was an early morning so I packed up breakfast the night before…My trusty apple oats.  They haven’t been as frequent lately with my appetite out of whack, but today they were needed…well, actually I just wanted to use my new spoon:

Topped off with pb and cranberry spread from TJ’s, I was in bliss.

The morning went by pretty quick even though I didn’t see much, but I was keeping myself occupied with my own mind games.  You brain starts to do that naturally when you’re by yourself too much.  Don’t’ worry, I’m not going crazy.

Maybe.

Lunch was upon me before I knew it and started off with an unpictured asian pear, then had the rest of lunch: 1/2 an avocado mashed with spices, mixed with some bell pepper pieces, diced tomato with carrot pieces and crackers used as dip.  I totally ate everything pictured.

In an effort to keep myself awake throughout the afternoon I snacked on one of these babies (Chocolate Covered Peppermint JoJo)…and may have also eaten a white chocolate covered ginger cookie too…that was way too much…and white chocolate overkill.  Not a fan.

By the time I got home the sun was almost set and in my town, there are hardly any street lights (you know you live in a small town when…) so I had to go to the gym.  I pumped out a 4-miler in 36 minutes starting off at 6.0mph and finishing at 7.0 for the last two miles.  Felt awesome!

I think my appetite is finally coming back so I was famished for dinner!  I knew I needed to make my eggplant so I pre-breaded them in a fish fry cajon batter and cooked them at 350 for about 15 min on each side.  Presto! Eggplant Sandwiches!

I melted a bit of sharp cheddar cheese on a few of the slices and topped them off with tomato slices, roasted red peppers, red leaf lettuce and some avocado.  Topped off with another slice of eggplant and you’ve got an eggplant sandwich!

I ate two more slices of eggplant afterwards for kicks and ended the night…cause my stomach is upset now.  Damned, and I thought my hunger was coming back.  Soon enough.

The week is almost half over!  Yay!  I’ve got a weekend of Christmas events ahead of me!  But it means I gotta work all the way until the 24th…oh well!

i like your new spoon! i find that having a nice eating utensil adds such another "level" to food enjoyment...

Okay, this is like the third post with delicious looking eggplant I've seen this morning and it's making me crave some...and I don't even like eggplant that much!! Nom. Maybe I'll make some for my dad tonight, he loves it!

That's a lot of sitting which would be tough! Super creative on the eggplant sandwiches! I like eggplant and usually buy them, but wait until they're nearly rotten to finally use them for some reason. But this looks like a great way to use them!
