I know you’ve all been waiting for this! After having the Holiday Cookie Exchange with the bloggers two weekends ago, I’ve been hounded for this recipe! I never thought people would be so interested; it’s so easy! It’s actually an adaptation of the Oreo Bark Recipe I used to make almost every single day when I worked at the chocolate store years ago…oh the things I could make for you…((smirk))
Ingredients:
- 24 oz semi-sweet chocolate chips
- 24 oz white chocolate chips
- One box of TJ’s Candy Cane Joe-Joe’s
Directions:
1. Line an extra large cookie sheet with waxed paper. Set aside.
2. Empty Joe-Joe’s (Ok, this picture isn’t of Joe-Joe’s because I didn’t have a box and just some mint oreos. Sorry). onto a chopping board and chop into coarse pieces.
3. Reserve 1.5 C of the chopped pieces, the largest ones you can get from the pile of chopped ones.
4. Carefully melt the white chocolate first (ie I don’t use a double broiler because of water contamination threat, so microwave on medium for 30 seconds at a time to melt the chocolate w/o burning it). Add in the cookie pieces minus the reserved cup and a half.
5. Immediately transfer the white chocolate cookie mix to the waxed paper on the cookie sheet and spread out evenly.
6. Melt the semi-sweet chocolate in the same way you did the white chocolate and spread evenly on top of the white chocolate cookie mixture.
7. Take the reserved 1.5 C of cookie pieces and spread over the top of the semi-sweet chocolate layer. Press down the cookie pieces with the back of a spoon.
8. Let cool at room temperature until it’s slightly hardened by not all the way. (if you stick it in the fridge, it might cause the chocolate to bloom = white streaks on the chocolate) and cut into blocks.
9. Store blocks in an air tight container and enjoy!
~~
You can use all sorts of cookies in the mixture along with dried fruit and pretzels/crackers. The bark world is open to anything!!!
