Oh you know I did…I made my own rainy day schedule. And heavy fog advisory. For myself. That meant short work day!
Raining and foggy all I wanted was oats…that and it was 53* in my apartment. I like to find other ways to warm myself other than the heater!
I didn’t last long out in the field. It was just too bad; I couldn’t see more than 100m in front of me! That doesn’t bode well for a survey where you need to be able to see over a half mile away…yep.
I did run into these little fella’s though! How cute are they!

I got home around lunch and instead of taking a nap (because believe me, I was exhausted; sleep was almost non-existent last night) I decided to eat lunch and get some research done about a new health insurance…damned I hate reading about that stuff! So confusing something!
I cooked up two eggs and added it to a sandwich with garlic hummus, roasted red bell peppers, tomato and lettuce. And a Cara Cara Pink Orange…I was wrong saying it was a Blood Orange yesterday. Sure does look like one though, huh!?
After I got tired of sittin on my butt all day I finally got my blood pumpin and did P90X Legs and Back then headed to the gym and ran 3.5 miles on the dreadmill. Now I remember why I run before I ST…no energy left afterwards! That was a hard run! I even had a snack of a very large gold blush apple and piece of bread with PB beforehand! Yeesh!
While droning away on the dreadmill I was drooling over the dinner I was going to make…Whit brought over some TJ’s Sausage-less Sausages the other day and I was trying to come up with ways to use them…since I’ve only ever had sausage about 4 times in my life. Yep, you read that right. I’m a sausage novice!
Anyhow, I knew I wanted something warm for dinner since well, it’s still raining and cold outside, so I made one with the sausage! Along with TJ’s Butter Biscuits to nosh on the side!
Vegetable Sausage-less Sausage Soup
Ingredients:
- 1.5 T olive oil
- 1 onion, sliced
- 3 cloves of garlic, diced
- 2 C low sodium vegetable broth
- 1 C water
- 1.5 C of chopped broccoli
- 1 zucchini, sliced
- 1 squash, sliced
- 3/4 C frozen corn
- 3 TJ’s Sausage-less Sausages
Directions:
- In a large soup pot, add olive oil, onion slices and garlic and cook through until soft.
- Add in vegetable broth and water, along with broccoli, zucchini, squash and corn.
- Cover pot and cook on medium until the vegetables are cooked through, about 10-15 minutes.
- While the vegetables are cooking, cut the sausage in half length-wise, then cut 8 times for smaller pieces.
- Add to cooking soup and cook until heated through.
- Serve with biscuits, or rice if wanted.
And to end the night…a small piece of Peanut Butter Rice Krispies…Go and check it out, you’re gonna love it!

Wow, 53 is cold for home! I can take cold, but I might need to turn the heater on for that! :-) The soups looks wonderful, I can't get enough hot soup on cold winter nights.

Oh my- I have missed you!! I am about to stalk your blog. I have absolutely loved your comments recently- SO thoughtful. Man, health insurance jargon is the worst! And have you noticed that NO one, not even your parents, can help explain what it means? I'm always asking, "Wait, what's the difference between copay and deductible?" and they never give me a straight answer. Bah.
great ideas to warm up with out the heater...although 53 in your house super cold!! WE keep our apt at 73 and I am STILL cold haha
