Hey everyone! Thanks so much for all the get better messages; I’m definitely feeling better today…after a very heavy and needed session with my counselor I am feeling more chipper than in the past week. My session came at just the right time because if I had to have gone for another week, it would have probably been pretty bad if not very worse at that point.
Anyhow, now that I’m feeling better it’s time to accomplish one of my December Goals: New Recipe!
Ok, I didn’t really make anything up, but I used a new product; that counts, right?
Whit picked this up for me since it’s a soy version and I’m always complaining about protein sources, so into dinner it went! I have actually never had Chorizo in my life, so this was going to be a first. I remember my old roommate making the real thing last summer and it was spicy enough to hurt my eyes just being made. Spicy!
We decided to go the traditional way and serve it up with some eggs…and other toppings. See the difference between the boy and girl plate?
I used two eggs and folded it over a tiny bit of sharp cheddar, topped with a bit of chorizo, tomato slices and a 1/4 of an avocado.
I was quite impressed by the taste of the chorizo, as it wasn’t too spicy for me, but I guess I can’t say much since I’ve never had the real thing. And if it wasn’t very spicy for me, that means it wasn’t spicy at all cause I have the most bland pallet on the planet. But Whit was pretty impresses so I guess it can’t have been that bad, right?
We ended the night with a handful of chocolate covered cranberries and are callin it a night! With some peppermint tea of course.
Seems like many people have been having a hard start to the week; what do you do to bounce back from a mood or being in a funk? Talking is my big one, especially to my counselor. I feel wayyyyyyyy better now!

I'm glad to hear that you are feeling better! Talking always helps me, but at the same time, just being alone and doing something that I enjoy (like baking or running) helps me feel better too! :)

what beats my funk? talking to you!!! And chorizo is right up my alley (ewwww), I eat that stuff all the time while at home...now I'm intrigued by the soy one...
Talking is the ultimate release, but I'm not going to lie, I usually need a good cry to get back onto my feet. I'll Pandora a few artists that have particularly strong lyrics and sing along, cry and get it out of my system, and then maybe wander off for some solo shopping or coffee at Panera. I've been known to spend a day or two out of town as well just to clear my head and the air. Glad you're feeling better...it sucks to be in a funk like that!
Speaking your mind and talking to a confidante really helps a lot! It eases the anger, the pain and all negative emotions and replaced with laughter.
I love chorizo but i never tried soy ones. Looks yummy! Should try your recipe some time. Thanks for sharing!
I was in a total funk last week, crying on the phone to my boyfriend about maybe needing to go back on depression meds. He kept telling me I was crazy and didn't need that, but I sure felt like I did.
After a few good nights of sleep and getting back into a healthy routine, I felt 100% better.

Talking and sweating to a good play list helps get me out of a funk.
talking it out is so important, as is allowing yourself to feel the funk for a bit! then getting out in the sunshine...
I've never tried chorizo, either, but I hear it's suppose to be pretty tasty!
