Hello my pretties! How are we doing this hump-day? One step closer to the weekend!!!
I woke up to the temps getting a little chilly again…though nothing compared to my Chicago friends who are suffering in sub zero temperatures…I feel for you Jenn and Mara. I wish I could give you some of my heat, or at least sun!
Anyhow, I soaked my mixed oats overnight to help them absorb the water (I don’t use stovetop to make my oats, never have never will!) since it doesn’t work very well just raw in water in the microwave…and I cooked it without the apple in it, which helped also. So of course, mixed oats, apple, pb and cranberry spread! I will never tire of this combo…sorry guys. I know how boring my oats pictures are…as they’re all the same. Lame.
Then it was out to the field!!! It was overcast a bit in the morning and made for some super gusty wind conditions…I was trying not to fall over in the 40+mph winds! yikes!
I think my new oat method did me well because 5 hours was passed and gone before I had any need for lunch! I didn’t bring anything exciting as I left so early and needed to make something quick! I used the Squaw Bread and made a veggie hummus sandwich and paired it with a banana.
All tastes good in the dry desert!
It was a long field day today, reaching 10 hours, but I kept myself entertained by marveling at the majesty of the stratification layers of the mountainsides. I don’t know how I ever missed these before, or saw them and just didn’t take not of them,
I mean, if you really think about it, there could be dinosaur bones in there. Those layers are MILLIONS of years old! I can’t even fathom the things that were around when it was being formed! Drives my mind wild!
I needed a little something something in the afternoon and snacked on Clif’s PB Crunch bar and a bunch of carrot sticks. It was just like pb and carrots!
I finally finished work and quickly made my way to the gym knowing that everyone and their mother would be there as it was almost 5pm. I knew I needed to take it slow and steady so I did 3.5 miles at 10min/mi on the treadmill, with the first mile at a 2% incline…which ended up being too much for my still recovering quad with it’s old injury…not good.
By the time I got home Whit was waiting for me with most of the ingredients for dinner! I gave him instructions of what to do for dinner, which I decided would be bean tacos! I asked on twitter for ideas of what to do with a half a head of cabbage and while most said stir-fry and soup, I decided to mix it up a little and use it in a mexican dish!
Whit sauteed up half an onion with a 1/4 of a cabbage and some frozen bell pepper slices…then added in a can of organic pinto beans with a bit of taco seasoning by TJ’s and bam! Dinner served a-la-boyfriend! I’m teach’n the boy how to cook!!!
I asked him to pick up corn tortillas and salsa at TJ’s so we had a variety of flavors in our tacos. I had two, one with each of the salsa’s. Both were ok to me, as the corn one was too sweet to go with my savory meal and the chipotle was super spicy for me! I bet the salsa’s would taste great together though…must try that next time.
And for dessert, I paired some strawberries with a piece of Boysenberry Chocolate Chip Bread…but ended up tossing the strawberries because they were really rubbery…and peeled an orange afterwards to satisfy the sweet tooth.
Now it’s time to cuddle with the boy since he’s leave’n me this weekend to go and catch some waves on the Pacific Coast…bonding time with Honey to come!

Ahhh, finally someone that shares my love for looking at hills and their formations! Those looked like nice clean and crisp cut sedimentary layers! It's crazy when you think of how old they might be..it completely boggles the mind to think what fossils could be buried within them. I would LOVE to go to the US some time to go to the grand canyon. I am in complete awe of that place when I see pictures. It's absolutely amazing!
What's "squaw" bread? It looks mighty tasty! That boysenberry choc chip bread looks awesome, too. I love moist and dense fruity breads. Mmmmmm :)

I love that you have two kinds of salsa with dinner. My kind of girl!! Oh, and that boyensberry bread looks amazing. I love the huge purple stain in it....that usually signals the moistest, chewiest spot!
