Snowed…Out Outside?

What a day, what a day.  The sun was out and gorgeous…but the previous acts of weather kept me from getting where I needed to go.  Just great!
Alas, I woke up this morning quite warm (ok, I wore socks to bed; makes a huge difference) so decided to eat the remaining Greek Yogurt I had with a tiny Rome apple, blueberries, kashi h2h, tj’s fiber o’s, and tj’s lower fat vanilla granola.  Holy yu.  Did I forget to mention that I added peanut flour to the yogurt?  With Vanilla and Cinnamon?! I went all out! Ok, not really…totally normal for me.

I guess the cereals/granola weren’t enough carbs to hold me over as long as oats so, so I buried myself into bar…though I decided that I’m going to try and stop eating bars for two reasons: reduce the amount of trash I produce and reduce the amount of processed sugar I consume.

Guess that means I should start making my own bread and tortillas huh?  Hrm, one step at a time.
I made this lunch yesterday but since I got home in time to have something different, I saved it for today so I didn’t have to worry about making it in the morning! Yay for saving time!  All it is is a banana/pb/cranberry spread wrap.  Nice and tasty.

Of course I couldn’t help but take pictures of the snow in the mountains to the south…

And the ones basically in my backyard.  That stuff is thiiiiiiiiiiiiiiiiiick.

I noshed on an apple on the drive home but was still hungry upon returning home, so I snacked on a pretty decent sized bowl of PB Puffins.  When I woke up from my nap to my cat pawing at my face, I headed over to the gym for a run!
I wasn’t planning on doing too much but wanted some speed in there, so I ran 4 miles (with a 1/4mi walk before and after) starting off at 6.0 going all the way up to 7.1 and staying there for a mile, then switched between 6.5 and 6.9 until the end of the 4th mile.  I was sweating up a storm!
I wasn’t too hungry when I came home and since this weekend is going to be spent away from home, I figured I’d use the perishables in the fridge that will go bad soon.  Enter gigantic salad: spring mix, tomato, carrot, cucumber, celery, cauliflower, tofu and some TLC crackers broken and sprinkled on top.

I know, so exciting.  So I totally ate two Chocolate Covered Macadamia Nuts Clusters Whit brought back for me from Hawaii.  Nom nom nom…
Now I’m fighting with my cat and admiring my new snapfish calendar!  It came out great!  Yay!!!
And I’m hoping to get field work done tomorrow…but the snow makes everything so muddy and undriveable.  I need a monster truck to get over some of this stuff.  without sliding all over the place.
Oh! But before I forget!  As far as my Environmental Fundraiser goes when I run the SD Marathon in June, if I let you guys vote on the organization to donate to would you be more inclined to donate!  I want to help whatever group we donate to the best of our abilities!!!

Making your own bars is always fun! I don't know if I could go all out in making my own bread and tortillas too... now THAT's a lot of work haha. Though once in a while why not! I did make homemade tortillas once and they were super, I've been wanting to do it again lately but seriously, who has time for all that! If only!

That anonymous comment was ME/Kristie/lighterportions? For some reason it won't let me put my name. I'm not a creeper though! haha

HA! You're right, going to bed with socks on makes a HUGE difference!

I think that would be nice to let us pick the organization to donate too. Good idea! Doesn't hurt to give it a try!

I have never thought of putting bananas or sweet things in wraps! I feel ashamed haha.

I've stopped eating bars for the same reason!! I still eat them occasionally, but they used to be an every-day thing. They're both EXPENSIVE and processed, so I think cutting them down isn't a bad thing!!

Actually, making your own bread really doesn't take that much time or effort...the large amounts of time for rising the yeasties are doing all the hard work. I'd just suggest letting your dough rise in a warm oven (under 100 degrees) if your apartment is chilly so the dough actually does rise!

Ooo...snow...we're supposed to get more snow again this weekend, which keeps me running indoors because of the black ice everywhere!

I feel the same tug-o-war about eating bars, too. You can get some really natural ones though (of course, that just gets even more expensive). But even something like Odwalla or Clif at least usually has something like brown rice syrup (I think?), but they're so sweet you know they use plenty of it. Why do manufacturers think everyone has the palate of a toddler??

BUT on the trash issue, a lot of those companies participate in something called TerraCycle, so if you do occasionally consume one of those bars, you could look into joining a local team onine that collects the wrappers!

I love making my own bread (but I cheat and use a bread machine) if for no other reason other than the smell - it's better than a candle!

And I will donate to whatever charity you choose - I would love to hear about the charity and why it's important to you!

definitely just start making your own granola bars---still delicious and less waste & sugar! here are a few i've made: http://www.thesweetslife.com/2010/10/pumpkin-granola-bars.html

I also just made a whole wheat quick bread the other night with pumpkin seeds that was SO good!! the recipe will be on the blog in the next few weeks!

Yogurt mess sounds AMAZING!!
Have you ever tried larabars? As far as the trash goes, this won't help along those lines...but as far as the processed sugar goes--these are just the right thing. These bars only have UP TO 8 ingredients...for example: dates, cashews. Seriously that's actually the only ingredients in one of them! And they are SUPER good!! I think you should deff check them out!! :D

Agreed on socks and a heated bed pad. :-) Pretty pics!

So true about bars and a great consideration. I try to make and freeze my own raw breads instead, it's much cheaper, but time consuming. I feel bad about occasionally buying almond milk when I know I can make my own and spare another container trashed.

Making your own bars sounds like a great idea! I would probably freeze most of a batch though because I get bored of one flavor, and then mix it up a little!

I WANT your pb, banana and cranberry wrap right now!!! And your yogurt...um WOW!! How are you?!?! I NEVER eat bars unless that is the only thing I could possibly eat. I am way too cheap, ha!

Your photos are looking fab lately, Melissa!

I play with speed on the treadmill, too... mostly so I won't get bored! I like having something to do and change the numbers every minute or so.

Just wanted to second the bread machine suggestion. I see them pretty often at thrift stores, where you can get them super cheap. With a bread machine, it's almost no work at all, and making your own bread gives you all sorts of choices about what to put in it. Plus, it saves a ton of money!
