Oh Friday…

I woke up with the intention of going to work and getting some hiking done in the mountains…but I got a message that my hiking buddy wouldn’t be able to make it so, WORK CANCELLED!  Ok, I had about an hour of paperwork and stuff, but that’s about it.

So, what do I do on a non-work morning?  What I do every other non-work morning: BAKE!

I’ve got an atrocious amount of bananas sitting on the table and need to use them up before I leave for the weekend, so what other than muffins, AGAIN.  Yes, I’m a creature of habit when it comes to baking.  I seriously need to use them for the oat bakes I’ve been seeing on so many blogs.  These muffins were a bit different than past ones though, as I actually added WALNUTS to them.  I have this lingering fear of nuts in any baked goods (baffles me since I’ll sit around eat them out of a jar…?) but this morning I just had to!

In my family it’s obligatory to stick walnuts in banana bread and brownies, so how could I defy my father’s wishes?  For my own tastebud pleasures?  Oh yes I did.

And they taste SO. MUCH. BETTER.

The crunch from the walnuts is certainly something I miss…never again will I omit those tasty and healthy nuts!

Along with baking I also decided to wait until I was truly hungry to eat breakfast, since most mornings I eat breakfast because I won’t have a chance later, or at all.  I was actually surprised when I didn’t need to eat until a full 2 hours after I woke up!  Craziness!  I had no idea what I wanted, and figured since I had bananas that were at the perfect ripeness, I had to have them on some toast with pb.  How much better does that get?

Anyhow, I found out that I’m getting a roommate in a short while so I made the effort to deep clean the apartment since well, I’m the only one making the mess here, right?  Yep, so out went all the recycling (Confession: I hate taking out the trash…any trash…not because it stinks but just, because.) I snaked on a muffin and an asian pear as all that business was going down.  Such great energy providers!

After all was cleaned and my fingers cramped from scrubbing (it’s not that dirty, I promise…) I did a bit of paperwork for work and was ready for lunch!  Since I’m going away fro the weekend to my parents I’m trying to finish up the little things in my fridge…with whatever’s left.  I knew I wanted some of that 3 Layered TJ’s Hummus so I paired it with a carrot and two pieces of baker bread, with a kiwi for sweetness.

And ended it with another muffin.  They are too freak’n good.

Off to catch up on too many emails and get a run in before the weekend starts! Yay!!!!

Those muffins look great! I love walnuts now, but they had to grow on me. I couldn't stand them as a kid. I don't eat breakfast until at least an hour after I wake up. I'm just not hungry yet. Usually I have a glass of water and a cup of hot tea while I'm getting my morning started, blogging, etc. Hope you have a great run this afternoon and a wonderful weekend!

YAY for no work!!! I always bake when I have free time. Girl, those muffins look AMAZING. LOVE pb/banana/toast!! A new roommate...that is exciting! Hope you have an amazing weekend!

I haaaate that feeling of cramped fingers when scrubbing. It's why cleaning the bathtub is my least favorite chore.

That TJ's layered hummus is the best!
And I actually find I'm hungry quicker when I don't have my usual morning routine...I usually hit the gym first thing and that holds of my hunger for a while. But when don't it is there in full force right away!
