Homemade Organic Black Bean Burgers

Oh goodness what a day!!!  It was so great in so many ways. 

New recipe all organic?  Check! 

New place to do surveys?  Check! 

Hanging out with my boyfriend?  Check! 

Well, almost, since I’m blogging and ignoring him.  So lets get this done!

My stomach’s been getting better in the morning but I’ve been taking it easy and making sure I eat slow because I figure that would be a factor too!  I started off with something simple this morning but it fit the bill for my long morning in the field.  Apple, oats, naturally more pb, cranberry spread?  Yep, you caught me with my boring breakfast again.  At least I have a cute cat in the picture to catch you attention, right?

Then it was time for a new field area!  I was in love, and I haven’t even hit the forest parts yet!  This is the grasslands!

How gorgeous is that?  I could have stayed there all day if I could have.  Nothing is better than the breathtaking view of the mountains.

Not a lot of time was spent eating because we were busy, so I ended up throughout the morning and early afternoon snacking on a Banana Walnut Muffin, two clementine's and two carrots dipped straight into a jar of PB.  Yes, I carry an entire jar of pb with me out there.  Wouldn’t you?

I got home at almost three and was starving, but knew I’d be having dinner a bit late, so I had a denser snack than normal of strawberries, a kiwi, 1/3c plain soy yogurt and 1/4 c muesli.  Totally hit the spot.

I went off to see my counselor and we had a pretty deep talk, maybe one I’ll discuss later but I was more excited about making dinner!  I’ve had Mexican on the mind for a while so tonight was the night!  I boned out on exercise for this too!

I decided on Organic Black Bean Burgers because I had a recipe for ones using chickpeas, but needed to use up some other ingredients.  Let me know if you try them, they were pretty good!

Organic Black Bean Burgers:

Ingredients:

  • 1 organic onion, chopped
  • 3 cloves of organic garlic, diced
  • 1/2 C frozen organic corn
  • 1 can organic black beans, rinsed
  • 2 Tbsp chopped, organic cilantro
  • 1 tsp organic chili powder
  • 1 tsp organic paprika
  • 1 tsp organic cumin
  • dash of organic pepper
  • 1 egg
  • 1/4 C panko crumbs

Directions:

  1. Preheat the oven to 350 degrees.
  2. Sauté the onion and garlic in a bit of olive oil, until translucent.
  3. Add in corn and cook through
  4. While the onion and garlic are cooking, rinse the black beans in water to rid of the salt, then add in spices, cilantro and mix thoroughly.  Use a masher and mash half the bean mixture while letting the rest stay whole.
  5. After the onions, garlic and corn have cooked, add them to the black bean mixture and stir together.  Add in the panko crumbs until mixed.
  6. Whisk the egg and stir it in.
  7. Using a half cup measuring cup, pour out the mixture on a greased cookie sheet.  Use a spoon to thin it out and shape it on the sheet.
  8. Cook on one side for 15-18 minute, flip carefully, and cook on the other side until crispy.
  9. Let cool and serve on a bun or salad with salsa and guacamole!

I had mine on top of a salad with some guacamole, salsa and crushed organic corn chips on top.  Whit had his (first picture) on hamburger buns with salsa, guacamole and mozzarella!

They came out pretty well, not too dry but might need a bit more chili powder or cumin for a tad more flavor!

Dessert is an Attune bar and now I’m off to cuddle with my boy!

Oh wow, those scenery pictures are really breathtaking. I bet they don't do justice to what it was like in person!

I'm not too fond of any beans other than chick peas/garbonzo beans. I'd like to try the chickpea burger though. Where did yo get it?
