Nap Time

Oh man, I thought I was going to be productive today…but that didn’t happen. Ok, maybe just a tad, but not how I had imagined it.

For some reason I had a hard time sleeping this morning, so I was up before dawn…think 5.30.  Ugg; does my body not know it’s Sunday?  So I was up, so I did some much needed stretching after that crazy hill run yesterday as I could barely move this morning!  Foam rolling happened too, along with some icing, just in case.

Eventually my belly was calling out for food so I busted open my new copy of Eat, Drink and Be Vegan Cookbook and settled on the Raspberry Cornmeal Pancakes…which were actually Blueberry Cornmeal Pancakes because I don’t have any raspberries (not in season means I probably don’t have it!).

I followed the recipe to a T minus the raspberries for blueberries, and course ground cornmeal instead of finely ground. I gotta go with what I got.

These turned out GREAT!  Not too sweet and I loved the crunch from the cornmeal.  I’m a texture person for sure! I ended up having two, one big and one small, with a smear of Archer Farms Almond, Cashew, Peanut Butter with a sliced banana.  Can I just say that my new nut butter will not last long? I have never had a more strong and flavorful nut butter, EVER!  TJ’s AB or PB with Flaxseeds is a very close second though!

Those lasted me a while and I ended up reading my Marathon Roadmap throughout the morning, along with my google reader.

I finally got hungry about 5 hours later (Yowzers! Gotta have that meal more often! Thank goodness I have extras!) and I wasn’t feeling a meal, so I snacked on a Banana Walnut Muffin, and two carrots with hummus.

Then I totally passed out.  And not just the normal power naps I take during the week that are like, 10 minutes.  This one lasted for THREE HOURS!  Goodness!  I guess that early wake up totally got to me, and I was fighting a food coma or something!  But it was one of those naps where you feel like you’ve woken up and try to open your eyes, but they’re glued shut and you fall back asleep, only to have it happen again. Yeah, it was one of those.

I was hungry when I woke up, so I slammed through some TJ’s O’s, one cup dry and one cup with the last of my USVAB.  Hit the spot.

I caught up with a good friend on the phone and before I knew it I needed to get to the gym!  I didn’t anticipate doing much but I figured why not since that 3 hour nap left me with lots of energy!  Burn baby burn! I ended up doing 10 miles on the bike in 38 minutes, then 2.25 miles running, with a .75 walk before and .5 after.  I felt great afterwards!  The stretching in the morning certainly helped!

By the time I cleaned up I was starving! I was super lazy but knew I needed something veggie filled so I cut up my leeks, Chinese cabbage, bok choy, shallots and the last of my TJ’s Meatless Meatballs.  I sided it with two pieces of bakery bread for extra carbs!

And ended the night with another Banana Walnut Muffin.  Those things are like crack with the walnuts; I’ll never leave them out ever again!

Your cornmeal pancakes look interesting! Corn products such as flour, syrup etc aren't really used here. They are rather difficult to find, as well!

Your food looks amaaaaazing as always.

I used to have to nap all the time but what really bugged me was, like you experienced, I found it so difficult to get up from my nap that I felt worse off for having one! Grr.

Glad to know I'm not the only one who usually ends up substituting things in recipes :). That breakfast looks really good.

And I can totally relate to my body not realizing it's the weekend and that I can sleep in. No matter how late I go to bed I always end up waking up around 7-8 - really annoying :P

YUM! Those pancakes look great! I made some oatmeal pancakes this morning--I agree with you--they lasted me much longer than my normal oat bowl!! :D
I have a question...what is USVAB?? I know...I'm a bit slow...hahah :P

Naps are my best friends!! As you get older, I think naps become better and better. But I do hate that groggy feeling too!

NAPS ARE THE ABSOLUTE BEST!!! I need those pancakes, they look absolutely amazing!!! I hate when I wake up super early on the days that I can sleep in!! AWESOME HILL RUN.....thanks for the shout out but girl you are seriously a ROCKSTAR!!! I love ya and wish I could come running with you!

I thought of you when I did my treadmill work out today - I didn't feel like running the whole time, so I would walk for 3 minutes on an incline, and then run for 2 minutes - each 2 minutes had to be faster.

I knew I couldn't hold if for two minutes, but my last minute sprint was at 7.5 mph - or an 8:00 mile pace - woot!

Someday I'll try for five minutes at that speed! Hope you have a great day!

HELLLOOO gourmet breakfast!!! Ahh I'm soo bummed Border's is closing- End of an era!? I muuust find that Archer Farms mixed PB- did u find it at Tar-jay?? SOunds so good! :D
