Did you think this was a vegetarian blog!? Yes?! Oh goodness…
After posting about my Endangered Species Chocolate Giveaway, along with WWF’s Earth Hour I finally got a bit of an appetite before heading to the gym. I snacked on a muffin with some nut butter and a small apple I didn’t get a picture of. It is barely close to the size of a regular apple, and more like a golf ball! How is that an apple? Maybe I’m spoiled…
I ended up staying home a bit longer than I thought before the gym so I grabbed a handful of cashew pieces as I headed out the door. Last minute energy to the rescue! I did an easy 4 miles in 39:20 and walked another 1.25 afterwards to help loosen up my legs. They were pretty sore after my stretch and strengthen class yesterday!
I cleaned up and went to see my counselor before picking up the goods to make Whit a good homecooked meal.
What is this chicken doing on my VEGETARIAN BLOG?! Oh yeah, my boyfriend is a carnivore…and this shows how much I like him that I prepared him meat. Haha. Of course going with my goals for 2011 to go organic and local, I stood in the meat department for what felt like forever before finally settling on these organic thighs. To date, I’ve never bought chicken in my life (and if you’re thinking of Thanksgiving when I cooked a turkey, I didn’t buy it, Whit did) and might have cooked it a handful of times for my family. Luckily, I had a plan for them and knew how to cook them for it.
Tonight was Mexican night in this household! I’ve been wanting to make enchiladas for so many months and tonight, I finally did it! I made some chicken, veggie and cheese ones for Whit, and some Black Bean and Veggie ones for myself with a side salad.
And dessert was just as scrumptious because it included these babies….and an apple.

Go you for cooking chicken! I imagine that must be a little difficult. Even though I do eat meat, it grosses me OUT raw... yuck.
Dark chocolate edamame...yum!
I was raised completely vegetarian and needless to say, I have no idea how to cook it! Luckily, the handy dandy Crock Pot does!! So far, the only way I've made chicken for my fiancee has been in the Crock Pot. He has liked the dishes, so no complaints on the convenience.
TJ's has THE best chocolate snacks and treats. SO addicting
I'm actually terrified of cooking meat, haha. Go you for taking the plunge!!
Wow! That's love. I'm not vegetarian but I do have to change up what I cook for my hubby at times.
I have never heard of chocolate Edamame! CRAZY!
I cook meat for Alex sometimes too - Mexican is always the easiest to do it with! I like to do make your own burrito bowls like Chipotle!
