Ok seriously, I’ve been thinking about this meal all week. It may only be Wednesday, but as soon as my AH box came with my organic asparagus on Saturday I’ve had this on my mind. I’ll get to that in a bit.
Lonnnnnnnnnnnnnnnng field day today. Like no joke. It was interesting though, because a meeting I went to evoked some emotions that I’ve never had about my job before…I can’t really discuss it on here due to confidentiality, but lets just say it’s made me question some things…
Anyhow, in preparation for my field day I made Gina’s Breakfast Cookie but with Gabriela’s twist of using PB Flour instead of pb mixed in. Oh my god, this was amazing.
The night before I smashed up a banana with a dash of cinnamon and a splash of USVAB, along with a 1/3C quick oats and 3T PB Flour. Protein in a bowl people. Add strawberries to the top and I was set.
I may just eat the same thing tomorrow. Don’t judge please.
I headed out into the desert where the only picture I got from the morning was this little baby:
How cold does he/she look!? The wind was blowing bad so I think she was using the wood pilings as a way to block it…I was definitely using the truck. I almost lost my hat, twice.
I spent mid morning in a meeting then took a site tour with some county people before finally getting back for lunch, and it was past 1pm by then! I ate that breakfast cookie at 5.30!!! Sadly the lunch they provided either had copious amounts of cheese or chicken in it, so I was lucky that I had packed a lunch just in case. Quite boring: Dark Chocolate Dreams PB in a tortilla, two clementine’s, apple and a banana raisin muffin.
I had a chocolate craving a bit after that, so while finishing up more surveys I had a handful of dark chocoalte mini cadbury eggs. No shame, I was running on fumes at that point.
Don’t worry, I used the wind to help energize me.
What, you don’t eat wind? Hah.
I hurried home after finishing work to get in a quick run before Whit showed up for dinner. I ran a speedy 3 miles and cooled down with a half mile jog before getting home and starting on a great dinner!!!!
I have been excited about trying this out since sampling it at the Natural Products Expo. I ended up with the Farro Garden Vegetable Variety.
I cooked the package (about 1C of grains with the dried veggies) in about 2.5 cups of water for about 25 minutes (basically until all the water was absorbed). In the mean time I trimmed and cut my organic asparagus, chopped up an organic onion and sautéed it in some olive oil, garlic, sea salt and pepper.
I served myself up a 1/2C of the farro, some asparagus and onions and as protein had 4 Gardein Chicken Tenders (I agree with you Gabriela, two as a serving?! That don’t do nothing!).
Best.Meal.Ever.
Maybe it was just the anticipation I had worked up for all the things on my plate, but man, I have not felt this satisfied about something I’ve cooked at home in a long time. But it might also be because I felt no guilt during or afterwards about the olive oil and grains in my meal. Oh yeah! My body worked hard for the nutrients in those eats!
I ended the night with a dessert I’ve somehow forgotten about until I reached into the freezer tonight for my chick’n fingers: Diary Free Ice Cream!
I got to try a lot of the coconut products by this company while at the Natural Products Expo and upon talking to one of the workers expressed my fears about the taste of their products. Without hesitation he handed me several coupons for free products, along with a coupon booklet that I could use on other products. I used one of the freebie coupons for this product (it ain’t cheap! and I have to travel kinda far for it!), and a $1 off coupon for another that will probably be eaten tomorrow. Be excited; it includes chocolate.
I actually tried this the night I got it and though it tastes like vanilla, it’s not as rich as I would like and has an “interesting” aftertaste so I topped (and bottomed) it with my oatmeal chocolate chip walnut cookies. Hit the spot.
I’m sharing some popcorn with Whit as we chill on the couch and I’m falling asleep.
My promised Side Note will be up tomorrow! Work won’t be as long (hopefully, currently getting in ~50hr of work a week!) so I’ll be able to finish it with the gusto that I want!

Yay I'm glad you enjoyed the breakfast!! And farro is definitely one of my favorite grains. I just can never find it at the regular grocery store!!

A bunny! Just in time for Easter, too!! We have bunnies around our house every spring and I love watching them. Drives the cats crazy, though! LOL
Your meal does look amazing. Faro is such a neat grain....even Noah will eat that one!!
